Ingredients

1 medium onion chopped
½ green peppers chopped
1 large tomato chopped
1 or 2 jalapeno pepper finely chopped (remove seeds if you lack a cast iron stomach)

Saute ingredients in 2 tbsp bacon grease or oil until pepper and onion are soft. Serve over soft fried or poached eggs on toast.
