Abbey's Vegan Mac n Cheese
Everybody likes Mac n Cheese and when its vegan, you can't go wrong! Dive into cheesy perfection by simply following the directions below.
1 lb macaroni elbows
⅓ cup flour
¼ cup vegan margarine (I use earth balance)
2 ½ cups non-dairy milk (I use full fat coconut milk)
½ cup Nutritional yeast
Season with salt, pepper, paprika, cayenne.
Add broccoli or other veg.
Boil the pasta with a little salt. No oil-- or the “cheese: sauce won’t stick! In a different pan, make a roux with the butter and flour. Add non dairy milk, increase heat to medium, and whisk for 2 minutes. Add green onions and continue to whisk until the milk thickens. Take off heat and add nutritional yeast and seasonings. Add the “cheese” sauce to your cooked pasta-- then add broccoli or any veg additions you like!
